  • 2 eggs
  • 1 cup sweet potato, cubed
  • 1 cooked chicken or turkey sausage link, sliced
  • 1 cup chopped kale or spinach
  • Avocado, sliced
  • 1 tsp olive oil
  • 1 garlic clove, minced
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss cubed sweet potatoes in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden brown.
  2. In a nonstick skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant, then add greens and cook until wilted. Season with salt and pepper.
  3. Slice the sausage link and pan-sear in the same skillet until browned on both sides.
  4. Whisk eggs in a mixing bowl. Pour into a clean nonstick skillet over medium-low heat, stirring gently until creamy curds form.
  5. Assemble the bowl by layering scrambled eggs, sautéed greens, roasted sweet potatoes, sausage slices, and avocado.
