  • 1 large sweet potato
  • 2 cups broccoli florets
  • 2 tsp olive oil (1 tsp for chicken, 1 tsp for sweet potatoes)
  • Salt & black pepper to taste
  • 1 tsp paprika
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 200C (400F). Season chicken with olive oil, salt, paprika, and garlic powder. Bake for 20-25 minutes until cooked through.
  2. Toss sweet potato rounds in olive oil and salt; roast on a baking sheet for 25 minutes until caramelized.
  3. Steam broccoli florets for 5-6 minutes until tender-crisp.
  4. Divide chicken, sweet potatoes, and broccoli into meal prep containers.
