Ingredients

  • Turkey bacon
  • Butter
  • Fresh basil
  • Fresh thyme
  • Fresh oregano
  • Fresh rosemary
  • Garlic
  • Carrots
  • Sweet yellow onion
  • Tomato paste
  • Flour
  • Chicken broth
  • Canned peeled whole tomatoes
  • Red apple vinegar

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crispy (about 10 minutes). Add butter until melted, then stir in fresh herbs and minced garlic. Cook for 2–3 minutes until fragrant.
  2. Add sliced carrots and diced onion to the pot; cook until softened (about 10 minutes). Stir in tomato paste and cook for another 2–3 minutes.
  3. Mix in flour, then pour in chicken broth and add whole tomatoes, smashing them gently with a spoon. Stir in red apple vinegar, bring to boil, then reduce heat and simmer for 30–45 minutes.
  4. Blend the soup until smooth using a blender or immersion blender. Serve topped with burrata.
