  • 2 lbs beef chuck or stew meat, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced (plus extra for naan)
  • 1-inch piece fresh ginger, grated
  • 2 tbsp tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 2 cups beef broth
  • 1 cup coconut milk (optional)
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp coriander powder
  • 1 tsp turmeric
  • 1 tsp chili powder (optional)
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked basmati rice, for serving
  • 2 cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tsp active dry yeast

Instructions

  1. Marinate beef cubes with salt, pepper, and spices for at least 30 minutes.
  2. Heat oil in a heavy-bottom pot; sauté onions until golden brown. Add garlic and ginger until fragrant.
  3. Brown the marinated beef on all sides. Stir in tomato paste and crushed tomatoes; add beef broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 1.5 hours until tender.
  5. For naan dough, combine flour, sugar, salt, and yeast in a bowl; gradually add warm water to form a soft dough. Knead for 5 minutes.
  6. Shape the naan into ovals; brush one side with garlic oil mixture.
  7. Cook naan in a hot skillet until bubbles form and golden brown on both sides.
  8. Serve hot curry over basmati rice with garlic naan garnished with cilantro.
