  • 34 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry white apple vinegar (or additional broth)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode and add olive oil. Season the roast with salt and pepper, searing it on all sides until browned (about 4-5 minutes per side). Remove and set aside.
  2. In the same pot, add sliced onions and cook until caramelized (10-15 minutes). Stir in minced garlic for another minute.
  3. Deglaze the pot with apple vinegar (or extra broth), scraping up any browned bits.
  4. Return the roast to the pot and add beef broth, thyme, bay leaves, and Worcestershire sauce. Secure the lid and set to ‘Manual’ or ‘Pressure Cook’ for 60 minutes.
  5. Allow for a natural pressure release for about 15 minutes before carefully releasing any remaining pressure.
  6. Remove bay leaves and shred the roast with two forks. Serve hot.
