  • 1/4 cup fresh lemon juice
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 tablespoon cornstarch
  • 1/4 teaspoon lemon zest
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar

Instructions

  1. In a bowl, whisk together flour, powdered sugar, and salt. Cut in chilled butter until crumbly. Form into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat oven to 350°F (175°C). Roll dough to 1/8-inch thickness and cut out circles. Place on parchment-lined baking sheet and bake for 8-10 minutes until lightly golden. Cool completely.
  3. Whisk together lemon juice, granulated sugar, egg yolk, cornstarch, and lemon zest in a saucepan over medium heat until thickened. Let cool completely.
  4. Beat egg whites until foamy; add cream of tartar and beat until soft peaks form. Gradually add sugar while beating until stiff peaks form.
  5. Spoon lemon filling onto each cookie and top with meringue.
  6. Broil cookies for 1-2 minutes until meringue is lightly golden brown.
