  • 4 red bell peppers
  • 1 large onion
  • 2 vine tomatoes
  • 1 cup walnuts
  • 3 cloves garlic
  • 2 tablespoons pomegranate molasses (or balsamic vinegar)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon cumin
  • ½ teaspoon red pepper flakes
  • ½ to 1 cup breadcrumbs
  • 1 teaspoon salt
  • 2 twists of black pepper (optional)
  • ½ cup pomegranate seeds
  • 1 tablespoon flat-leaf parsley (chopped)

Instructions

  1. Preheat the oven to 400°F (200°C). On a baking tray, arrange quartered red bell peppers, tomatoes, and onion pieces. Drizzle with olive oil and season with salt and pepper. Roast for 30-40 minutes until slightly charred.
  2. In a skillet, heat olive oil over medium heat. Sauté grated garlic with tomato paste, cumin, and red pepper flakes for about three minutes until fragrant.
  3. In a blender or food processor, combine the sautéed mixture with roasted vegetables, walnuts, and pomegranate molasses. Blend until creamy; adjust thickness with breadcrumbs if needed.
  4. Taste and adjust seasoning before serving topped with pomegranate seeds and parsley.
