  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

  1. Line an 8-inch square baking dish with parchment paper.
  2. In a large saucepan over medium heat, melt the butter and brown sugar until well combined. Stir in the vanilla extract and mix in the rolled oats.
  3. Cook on low heat for about 3 to 4 minutes until blended.
  4. Pour half of this mixture into the prepared dish, pressing down firmly for an even layer.

  6. Pour this filling over the oat crust and spread evenly. Reserve some filling for drizzling later.
  7. Add the remaining oat mixture on top, pressing down gently and drizzle with reserved chocolate.
