  • 1 stick (1/2 cup) butter
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) with the butter melting in a 9×13 baking pan.
  2. Halve and lightly score the potatoes after removing the pan from the oven.
  3. In a mixing bowl, combine Parmesan cheese, 2 tablespoons of herb seasoning, salt, and pepper.
  4. Sprinkle the seasoning mixture in the pan and place halved potatoes cut-side down on top.
  5. Spray tops with nonstick cooking spray and add remaining herb seasoning.
  6. Bake uncovered for about 40 minutes until tender when pierced.
