  • 1 medium onion, freshly grated
  • 4 medium potatoes, grated and drained well
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt and freshly ground black pepper to taste
  • 6 ripe tomatoes, diced (for topping)
  • 150g fresh mozzarella cheese, shredded (for topping)
  • Fresh dill, chopped (for garnish)
  • Olive oil (for pan-frying)

Instructions

  1. In a mixing bowl, combine the grated onion and potatoes. Add the eggs, salt, pepper, and flour; mix well to form a batter.
  2. Heat olive oil in a non-stick frying pan over medium heat. Spoon the potato mixture into the pan to form pancakes and cook for about 2 minutes on each side until golden brown.
  3. Preheat your oven to 200°C (400°F). While pancakes are cooking, mix diced tomatoes with half of the mozzarella cheese and chopped dill in another bowl.
  4. Once cooked, place pancakes on an oven-safe baking dish. Top each pancake with the tomato-cheese mixture and sprinkle with remaining mozzarella.
  5. Bake for approximately 15 minutes until the cheese is melted. Serve warm.
