  • 1 cup walnuts, finely chopped
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup salted butter, melted
  • 6 oz 100% pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 16 oz cream cheese, room temperature
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T salted butter, softened
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. For the crust, combine finely chopped walnuts, almond flour, white sugar, and melted butter until moist. Press evenly into the baking dish.
  3. In a mixing bowl, beat cream cheese with white sugar until smooth. Add eggs one at a time, then pour 1½ cups of this mixture over the crust.
  4. Mix remaining cheesecake batter with pumpkin puree and pumpkin spice; spoon it carefully over the first layer.
  5. Prepare the streusel by blending sugars, oats, flour, softened butter, and vanilla until crumbly; sprinkle over the cheesecake layers.
  6. Bake for 60-70 minutes until set around the edges but slightly jiggly in the center. Cool before chilling for at least two hours.
