  • 6 cups Rice Krispies or crispy rice cereal
  • ½ cup unsalted butter
  • 13 ounces mini vegan marshmallows
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • Pinch of salt
  • Optional: Orange food coloring and fall-themed sprinkles

Instructions

  1. Spray a 9" x 13" baking dish with non-stick spray and set aside.
  2. In a large bowl, add the Rice Krispies.
  3. Melt the butter in a large saucepan over low heat. Stir in the vegan marshmallows, pumpkin pie spice, vanilla extract, salt, and food coloring (if desired) until fully melted.
  4. Remove from heat and mix in the Rice Krispies until well-coated.
