  • 1 1/2 tablespoons unsalted butter
  • 4 1/2 cups vegan marshmallows (divided)
  • 1 teaspoon vanilla extract
  • 3 cups Rice Krispies cereal
  • 2 1/2 tablespoons unsalted butter (for pumpkin flavor)
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons orange food coloring (optional)

Instructions

  1. Grease an 8-inch round cake pan and set aside.
  2. In a large saucepan over medium heat, melt 1 1/2 tablespoons of butter and add 2 cups of vegan marshmallows. Stir until melted and smooth; mix in vanilla extract.
  3. Remove from heat and fold in Rice Krispies until coated.
  4. In another saucepan, melt the remaining butter and stir in pumpkin pie spice, then add the other 2 cups of marshmallows until melted. Mix in orange food coloring.
  5. Combine both mixtures, press into the prepared pan, and let cool.
  6. Once cooled, cut into pieces and optionally top with whipped cream.
