  • 1/2 cup + 2 tbsp brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup pumpkin puree, blotted
  • 1 egg yolk
  • 1 tsp pumpkin pie spice
  • 2 3/4 cups all-purpose flour, spooned and leveled
  • 1 tsp baking soda
  • 1 1/2 cups white chocolate chips

  1. Preheat your oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  2. Blot the pumpkin puree with a paper towel to remove excess moisture.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
