  • 1 cup ricotta cheese
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 4 slices of crusty bread, toasted
  • Fresh thyme or basil leaves (optional)
  • Extra honey for drizzling

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Toss sliced strawberries with honey, balsamic vinegar, and salt in a bowl. Spread on the baking sheet and roast for 20-25 minutes until soft and caramelized.
  3. In a separate bowl, mix ricotta cheese, honey, and vanilla until smooth using a hand mixer or whisk.
  4. Toast slices of crusty bread until golden brown.
  5. Spread whipped ricotta on each slice of toast, top with roasted strawberries, garnish with fresh herbs if desired, and drizzle with additional honey.
