  • 2 leeks, chopped
  • 2 large carrots, sliced
  • 6 cups chicken broth
  • 2 pounds potatoes, peeled and diced
  • 1 pound fresh mushrooms, sliced
  • 1 cup half-and-half
  • ¼ cup all-purpose flour
  • Fresh dill for garnish

Instructions

  1. In a large saucepan, melt 3 tablespoons of butter over medium heat. Add leeks and carrots; sauté until softened (about 5 minutes).
  2. Pour in chicken broth; season with dried dill, salt, pepper, and bay leaf. Stir well.
  3. Add diced potatoes; cover and cook for about 20 minutes until tender. Discard the bay leaf.
  4. In a skillet, melt remaining butter and sauté sliced mushrooms until lightly browned (approximately 5 minutes). Stir into the soup.
  5. In a mixing bowl, combine half-and-half with flour until smooth; gradually stir into the soup to thicken.
  6. Serve hot garnished with fresh dill.
