  • 6 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp honey
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp ground black pepper
  • 2 tsp sea salt

  1. In a bowl, mix minced garlic, Dijon and whole grain mustards, honey, rosemary, thyme, black pepper, and sea salt until well combined.
  2. Generously rub the marinade over the lamb shoulder, covering all surfaces. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat your oven to 325°F (160°C).
  4. Place the marinated lamb in a roasting pan and roast for about 4-5 hours until it reaches an internal temperature of 195°F (90°C), basting occasionally with pan juices.
