  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • Garnish: 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sear beef belly pieces until browned on all sides (about 5–7 minutes). Remove and set aside.
  2. In the same pan, sauté minced garlic and sliced ginger for 1–2 minutes until fragrant.
  3. Return seared beef belly to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well.
  4. Bring mixture to a boil; reduce heat to low and simmer uncovered for 1 to 1½ hours until beef is tender and sauce has thickened.
  5. Taste and adjust seasoning if necessary; serve hot garnished with green onions and sesame seeds.
