  • 1 lb beef tenderloin or shoulder, thinly sliced
  • 4 cups bok choy, chopped (white stems and green leaves separated)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil

Instructions

  1. In a bowl, combine the sliced beef with cornstarch. Add soy sauce and mix well. Let marinate for about 10 minutes.
  2. Heat vegetable oil in a wok or large frying pan over medium-high heat until shimmering.
  3. Add the marinated beef to the pan in a single layer and sear for about 2–3 minutes without stirring until browned. Flip to cook through, then set aside.
  4. In the same pan, sauté minced garlic and grated ginger for about 30 seconds until fragrant. Add bok choy stems first and stir-fry for about 2 minutes; then add bok choy leaves until wilted.
  5. Return the cooked beef to the pan with bok choy. Toss together for another minute to heat through.
