  • 1 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 tbsp red food coloring
  • 16 oz cream cheese, softened
  • 2 large eggs (for cheesecake)
  • 1 1/2 cups fresh strawberries, halved
  • 1/4 cup strawberry glaze or jam

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, sift together flour, baking soda, cocoa powder, and salt. In another bowl, cream butter, oil, and sugar until fluffy. Beat in egg and vanilla; mix in buttermilk, food coloring, and vinegar. Gradually add dry ingredients until combined. Pour into the prepared pan and bake for 15-20 minutes until a toothpick comes out clean. Cool completely.
  3. Lower oven to 325°F (160°C). Beat cream cheese and sugar until smooth; add eggs one at a time. Stir in vanilla. Pour over cooled cake base and bake for 40-45 minutes until set but jiggly in the center. Cool at room temperature before refrigerating for at least four hours.
  4. Top chilled cheesecake with halved strawberries and warm strawberry glaze.
