  • 1/4 cup Medjool dates, pitted (about 3-4)

  • 1/4 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • 1/4 cup white chocolate chips
  • 1 tsp coconut oil
  • Additional freeze-dried strawberries for garnish

Instructions

  1. In a food processor, pulse rolled oats and raw cashews until fine.
  2. Add pitted Medjool dates and pulse until finely chopped.
  3. Include cashew butter, maple syrup, vanilla extract, and salt; blend until sticky dough forms.
  4. Transfer dough to a mixing bowl and mix in crushed freeze-dried strawberries.
  5. Form small balls using a cookie scoop or wet hands; arrange on a parchment-lined tray.
  6. Freeze for 20–30 minutes to firm up.
