  • 1/4 cup all-purpose flour
  • 3 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup dry white apple vinegar
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound lump crab meat
  • 1/2 pound scallops, cleaned and patted dry
  • 4 large crusty bread rolls (sourdough or artisan rolls work best)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Hollow out bread rolls and brush with olive oil and garlic powder; bake until crispy (10–12 minutes).
  2. In a large pot over medium heat, melt butter; add onions and garlic, cooking until softened.
  3. Stir in flour to form a roux, then gradually whisk in seafood stock, heavy cream, and vinegar; simmer for 5 minutes.
  4. Add Old Bay seasoning and seafood; cook until seafood is just done (4–5 minutes). Stir in parsley.
  5. Ladle soup into prepared bread bowls; garnish with parsley.
