  • 125g softened butter
  • 70g muscovado sugar
  • 1 egg
  • 250g flour
  • pinch of salt
  • 250g pecans (2/3 chopped, remaining whole)
  • 70g softened butter
  • 50g muscovado sugar
  • 15g cornstarch
  • 3 eggs
  • 1 tsp vanilla extract
  • 200g maple syrup
  • pinch of sea salt

Instructions

  1. Cream the softened butter and muscovado sugar together until smooth. Add the egg and mix until well combined.
  2. Gradually incorporate the flour and salt to form a dough. Wrap in plastic wrap and chill for at least 1.5 hours.
  3. Roll out the dough to fit your tart pan and pre-bake at 180°C for about 20 minutes.
  4. Toast the pecans at 170°C for around 15 minutes; let cool.
  5. Cream together butter, muscovado sugar, and cornstarch. Mix in eggs and vanilla extract until smooth; fold in chopped pecans.
  6. Pour filling into pre-baked crust and top with whole pecans. Bake for an additional 30-40 minutes until set.
  7. Allow to cool before slicing.
