  • 500g chicken breast, cubed
  • 1 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cups broccoli florets
  • 1 cup jasmine or basmati rice
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tbsp brown sugar
  • 1 tsp cornstarch
  • 2 tbsp water (for slurry)
  • Salt & pepper to taste

Instructions

  1. Cook the Rice: In a pot, bring 2 cups of water to boil. Add rice and a pinch of salt; cover and simmer until fluffy.
  2. Steam the Broccoli: Place broccoli in a steamer basket over boiling water for about 5 minutes until tender-crisp.
  3. Sauté the Chicken: Heat olive oil in a non-stick frying pan over medium-high heat. Season chicken with salt and pepper; sauté until golden brown (6-8 minutes).
  4. Make the Sauce: In a bowl, mix soy sauce, honey, rice vinegar, brown sugar, minced garlic, and grated ginger. Pour over chicken; simmer for 2-3 minutes.
  5. Thicken the Sauce: Mix cornstarch with water to create a slurry and stir into the pan until thickened.
  6. Serve: Layer cooked rice at the bottom of each bowl; top with teriyaki chicken and steamed broccoli.
