  • 1 tablespoon sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil (for dough)
  • 1 tablespoon olive oil (for filling)
  • 2 large onions, thinly sliced
  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 cup marinara sauce

Instructions

  1. In a small bowl, combine yeast, warm water, and sugar; let it sit until foamy (5–10 minutes).
  2. In a large bowl, mix flour and salt; add the yeast mixture and olive oil. Knead until smooth (8–10 minutes). Let rise for 1 hour covered in a warm place.
  3. In a skillet over medium-low heat, sauté onions in olive oil until caramelized (15–20 minutes). Add garlic and spinach; cook until wilted (2–3 minutes). Season with salt and pepper.
  4. Preheat oven to 375°F (190°C) and grease a baking dish.
  5. Roll out the dough into a rectangle. Spread marinara sauce on top and layer the onion-spinach mixture.
  6. Roll tightly into a log; slice into 10–12 pieces and place in the baking dish.
  7. Bake for 25–30 minutes until golden brown.
