  • 2 cups chopped rotisserie chicken
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 2 apples (peeled and roughly chopped)
  • 1 white onion (peeled and roughly diced)
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 cans cannellini beans (drained)
  • 2 cups shredded Mexican blend cheese
  • Salt & pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped apples and diced onion; cook until softened (6–8 minutes). Stir in chili powder and cumin.
  2. Reduce heat to medium-low; melt butter in the same pot. Whisk in flour for about 60 seconds.
  3. Gradually whisk in chicken broth followed by half & half; simmer until thickened (3–5 minutes).
  4. Stir in apple/onion mixture, shredded chicken, and drained beans until well combined.
  5. Adjust thickness with additional broth if needed; mix in shredded cheese until melted.
  6. Serve hot with desired toppings.
